So while smoking andouille & sausage today there was a little room left in the smoker. Which doesn't work again so no worries about cooking the meat while smoking! after smoking, rubbed with kosher & cracked black on one side, flip it over and dust with Totanka dust....... Eatting like men tonight, steak, baked potato, and some cut up tomatoes, thats it!


Smoked w/ pecan and apple. Those are happy happy steaks at the moment. AND the Taters is a cookin!

Be back with updates. I hope I can get a finished picture before consumption..... thats always a problem!

(BTW that is a normal Dinner sized plate, LOL... just monster potatoes I think)

OMG! This wasn't something fancy, but I swear that was the best meal I ever had. I would pay 100.00 a plate for that and think I was robbing the resturant!

Damn I set it down to type I swear the plate never moved!


<Chuckles> just kidding Just kidding..........

My favorite little big pit! Its just damn handy too!


Steaks on for the sear, don't know why you can see any flames?


3 mins on each side......... I am drooling remembering that aroma!

Throw in pecan shells on the cool end of the pit and move the steaks down over them.


The smoke was hogging the whole picture! 5 mins with the roof on. This is normally where I use a little compound butter but didn't this time.

In to set and rest a few, but not too long. First ya can't stand to let it just sit there, second it only cooked for a total of 11 mins.


Its a great time to clean up, keep yourself busy......LOL

I am trying to pick the best pictures and there just ain't no bad ones!


The picture just doesn't do it justice either!


OMG what a meal!  It do believe its the best teak I ever cooked and the top 5 best steaks I ever ate!

I was mad because it was cooling down while I ate it because I was taking my time loving ever bite! Even the potato and tomatoes were perfect........ It was an amazing meal I wish I could have shared with each and everyone of yall. 

Its hard to think about that sausage in the smoker right now, I am SOOOOOOOO stuffed!!

I gotta make 2 of them tomorrow---Giant had them for $5.99 (Choice). We have 14 in the Freezer, but at $5.99 I still had to get 4 more!!

Thanks for the encouragement guys..... Its just hard to screw up two pretty ribeyes! Thats why there is only gonna be a tater and salad to go with it. I always think about "Tim 'The Toolman' Taylor's show when the build the Man's Kitchen....LOL It had a butcher, a choice of beans or tater and some type of rabbit for for the panty waists ....MY side hurt after that show. BTW it is "Home Improvement" Fifth Anniversary (TV Episode 1994)

Really hard to mess up good meat, and those were choice steaks! But even I was impressed.
 
Looks great Foam!  I was starting to think you got tired of us! haha  Glad you're back!  I gotta get me some of those pecan shells!
Never! Just life seemed to crowd back in on me. Plus I had showed most all of my tricks already, figured I should wait for new or different. Didn't want to bore folks.and wear out my welcome.

Thanks, and pecan shells are a renewable resource!

Thanks but marvelous meat will always triumph. It was outstanding even as choice. I even noticed that there was nearly zero marbling in the steak before cooking.

Thanks Case. I actually thought about you and the boys while cooking it. It would have been unbelievable cooked on a grill while camping next to the water!

Thanks Bear and I know you'll hit a home run! I offered a bite to a friend and she got all wide-eye'd and said, "Ooooo you can really taste that pecan smoke, can you show my son how to do that..".

When on sale, like you I am sure, I'll by a rack, But I really prefer the pork chop racks... A couple of steaks a year and I have hit my beef quota.
