A new smoker owner asked me how to smoke CSR's. He didn't want any sauce recipes or fancy stuff, he just wanted a method. I did this cook to demonstrate the basics.

I rubbed some ribs down with my basic barbecue rub but told him there were many good commercial choices.

I preheated my smoker to 230 F and put the CSR's on. I smoked to an internal temperature of 120 F and then brushed them with a commercial BBQ sauce (this took me about 1 hour 15 minutes). I used Rufus Teague's Honey Sweet. I continued smoking to an internal temperature of 155 F (about 40 minutes).

I let them sit for a few minutes.

I served them with She Who Must Be Obeyed's great potato salad and coleslaw.

The Verdict

Nothing fancy. No homemade sauces. Simple. Delicious. Just what was asked for!

The 145 F is the new safe level and many people like it. I guess I have eaten so much well done pork in my life that I prefer 155 F. It is really a matter of personal preference.
