Guess I should have checked the date on this thread before I featured it.

@chopsaw do you think this is a mixture that could be breaded and deep fried to make homemade chicken nuggets?
 
For anyone on the fence running chicken like this, it's as good or better than you think it is. I REALLY like thighs+all the skin. Rich knows that my goal is to learn how debone leg quarters to drive the price even more. Anyhow, this stuff is great on it's own and REALLY adds to things like meatballs. Chicken is a very good sub for veal, turkey might even be better. This is weisswurst made a 50/50 blend of pork/thighs+skin in place for veal. Whole reason I got into making sausage was to make it and hard to believe I got a good handle on it. Here is the original post of where I got into chicken sausages. Probably could . I think I might change it up some . I just did a ground turkey schnitzle thing . I had 2 turkeys that I deboned and ground the whole thing minus the skin . Turkey skin is too thick for this in my opinion .
I added some potato starch to the grind to help retain the moisture . Shaped it , then flour , egg and panko . Pan fried . Really good .

So I guess I'm thinking " chicken nugget " I would lose the worcestershire sauce and the egg .
Have to look it over to decide if anything else . Could weigh out the size you want , smash them and pan fry like above . I bet they'd be good .

The turkey looks great too! At least you'd know what was in the chicken nugget!

I went down that rabbit hole and there are ton of Mom's making "nuggets" this way. They use cookie cutters to shape. IE dinosaur/stars/kids stuff. White Castle chicken rings are ground chicken.

I have made plainer versions .. heck even used canned chicken once... just checking the thoughts on the "extra" in this
