I have no particular hate for chicken fat, but I always carefully trim my boneless, skinless chicken thighs. Mostly because there is more of me than I would prefer and every little bit helps...

They look fantastic!  I'll forward this on to my mother and sister as they would love to make this dish.

I'm fortunate that the Tex-Mex restaurant 100yds away from me makes the BEST cheese and onion and chicken enchiladas with sour cream sauce I've ever had, hands down!  Their beef enchiladas are a little dry inside due to no sauce or cheese on the inside but that's ok, I just skip them lol

Can't say that I have. Not to many Mexican resturants in Northern VT., and I don't really want to do the T.V. dinner thang.

Hey Chris, I live in a real small town in Central Florida & we have several Mexican restaurants around here.

You should make a couple enchiladas yourself, they get pretty addicting.

Al, it definitely on my to do list. Small town rural living does have it's pluses and minus's. Unfortunately authentic dinning isn't one of them.

I guess were lucky that this area has a lot of produce farms & citrus groves around.

And most of the pickers are Mexican, so there are a lot of Mexican restaurants & a large section in the grocery store devoted to Mexican cuisine.
