Smoking 15 pieces of Cabot Seriously Shatp White Cheddar today with apple.

Perfect temperature today, high of 37.

Want to try adding some dried spices on a few pieces.

What are your favorites?

That's a goodly amount of cheese Bill. Good luck. Sorry I can't offer any advice on the spice. I've never tried doing it.

What are your favorites?
Caraway seeds on Swiss or horseradish cheddar .
Sweet heat pepper blend on the white cheddar .

That's the good stuff in my opinion...
See if you can find any of the Legacy collection from Cabot .
I've had the Farmhouse reserve and the white oak .
Good stuff .

and pulled this out . Score !

My Son called me last year and told me they were closing these out at a buck a peice .
I bought everything he had left . This one got overlooked I guess .
