Picked up 7 pieces of Cabot Extra Sharp White Cheddar and 3 pieces Cracker Barrel Sharp White Cheddar.

Going in the trash can smoker tomorrow with a hickory/apple mix in the pellet tray.

Pics to come.

Sunny and in the 50s tomorrow.

Been a long winter, will be good to sit outside or putter in the garage while the cheese is smoking.
 
Late start. Better late than never.

Went straight apple instead of the mix.

Found a few extra lonely pieces into the fridge to throw on.

I need to do more too. I did 20 pounds in December, but I'm down to maybe 3 pounds. I'm going hang onto those for a few years. Shooting for 5+ years of aging time for them. I've gone 3 years before giving in and eating it. Good eating.

The longest I've kept any is 4 years if memory serves me... vac sealed in the fridge...
 
Looks dang good to me!

I've been waiting on the weather to be right for a week or so now. If the outside temp is right, the wind is howling. If the wind is right, the temp is too cold. Hopefully one of the days the conditions will be right. Still trying to find a block of pepper jack for the wife.
