Morning smokers. Smoked a pork butt yesterday. Was so hot out I probably could have just set my smoker in the sun and wouldn't have even had to fire it up lol.
Had a 9lb butt. Rubbed with Tennessee Mojo
Then onto the smoker at 225 using pecan. About 5hrs in it hit 157° so I wrapped it in a foil pan to finish. This is right before wrapping
Smelled delicious.
Took another 4 hours to reach probe tender. That happened about 204°. Pulled it off took out of pan and double wrapped in foil and into my cooler wrapped in towels for an hour and a half.
While it rested wife was making up some delicious tater salad
Earlier in the day she made a lemon icebox pie. It was awesome
Time to pull the meat
The pieces missing were snacks for the cook lol
Got it pulled and added back some of my juice that I defatted
And my plate
All was delicious. Great end to the day. Many a shiner bock was consumed
