Ok still on my welly kick...lol

So I will introduce the smoked brisket welly!

Looking promising......added thyme to the crust this time.....adds a nice bling.

Joined with some pan seared carrots and skin on red mash with some red wine blackberry reduction.

That’s simply beautiful. The Wellington is awesome and your plating is gorgeous. I bet that blackberry reduction is very nice.

That pastry wrap looks almost too pretty to put in the oven, but it surely did come out looking great. The whole meal looks fantastic. Great job.

Thanks MJB! My wife recently saw the root veg and grabbed a bag for me to dress it up. The mash is her item. Crème fraiche and boiled water reserves are the secret (Gordon Ramsey is to thank for the secret).

Sandy, its just frozen puff pastry. Its by the frozen pie crust. the sheets are folded up so its about the size of a boxed spaghetti. One of these days I will have my daughter make some scratch for me but that is later.....

Thanks Smokin! Practice practice and more practice....right that is how you learn. The little thyme sprigs will add some eye candy for sure. Just glad I'm good with chop sticks, cause they may it easy and I have resisted using tweezers for prepping BBQ because that is a sign of having issues....LOL

That looks awesome, probably tasted better than that. I made a Wellington a few months ago. Got bored with this CV19. It turned out pretty good. Love watching Gordon Ramsay.

Thanks RJ....maybe the “Cx%*#%19” and sans oven in the house has something to do it....but ever since we took our boy to Hells Kitchen in Las Vegas in Sept the Gordon bug has impacted our eating for sure!
