I just bought a new Camp Chef Smoke Vault 24 and am looking forward to doing some ribs this weekend. The receipt in the manual says 2 - 3.5 hrs for two rack of ribs and 3-5 hrs for 4-6 lb brisket... These times seem very low to me... Is there something I'm missing or don't know about the Smoke Vault?
 
We go by the internal meat temp, not time.

For ribs that's around 195-205 & for brisket about the same or until probe tender.

Thanks Al. Am I correct to assume that those times in the manual are a bit low? I was under the impressions ribs were around 3-6 hrs smoking at a temp around 225 degrees.
