I used gmc2003 idea for country fried steak and chicken fingers on eggplant.
Smoked a 4.7 pound butt. Smoked until it 160 then grilled until it hit 170.
While it was resting on the board.
Eggplant was prepped earlier by slicing, salting with natures seasoning, put in a colander on edge and refrigerated for 1 hour. Rotated over at the 1/2 mark . Pulled from frig, patted dry both sides then dipped in egg and covered by panko bread crumbs mix of grated Parmesan and nature seasoning and dried parsley.
Was originally going to make the eggplant like eggplant parmesan, but alas didn't have the mozzarella. Substituted pepper jack and instead of using marinara sauce used home made ranch.
Here it is ready for eating.
