I just want to give a big thanks to the stick burners around here. Joe Black, Gary S, 3montes, BDSkelly, smokin Al and many others. I've been reading and soaking in all of your posts, comments, and tutorials on stick burning and fire management for months. Now that I have smoker that will burn logs, I was able to give it a shot. I've done three wood smokes now and thanks to you guys they've all been successful. And incredible!

Thank you very much, Lance. While I have been smoking for a number of years, I have only been on here about 1-1/2 years. I have learned a lot from those others that you mentioned plus a lot more. I just enjoy passing along what I've learned. Never the less, you are most kind to post this thread.

If you have the time...in my opinion offsets put out some darn good Q.
Glad your doing well with your offset! And the more you do it, the better you will get at maintaining temps.

Well Joe, I'm sure I left a few folks out which I'm sad about, but my memory sucks these days. I've been at this game fora minute as well but only recently found this forum. And as I said, I've read and soaked up as many posts on fire management and stick burning as I could find. You've posted your specific procedure so many times, I might know it by heart. So many others have posted such comprehensive instruction that when I fired up the first log, I knew exactly what to do and what to look for. So, to you and so many others on this forum, thank you!

It's working great Al, thank you.band no, you can't. I'm completely blown away. Your early successes going from the WSM to the Lang gave me a lot of Hope and confidence to make my own transition. So Thank you!

I agree! The difference is amazing. I'm pretty confident with the Q I was putting out with my WSM. However, there was always that was missing. I think I found it. The great thing about this pit, and one of the reasons I got it, is that once I wrap I can set up a charcoal smoke for heat and walk away.
 
I'm with you, Lance! I went from electric to gas and got an offset this spring. Thanks to this site (and the patient and helpful folks therein), I've made better stuff than ever, and had fun doing it.
Once you've cooked with wood, you'll never go back (to coin a phrase).

Great to see you being successful at stick burning Lance! And very nice of you to post your thanks. I'm always pleased to see another stick burner take up the art. With the advent of all the technology and new style set it and forget it smokers available old school stick burning is a fading interest.

After you do it for awhile you will develop your own style and way of doing things. There will be occasional challenges ahead such as weather, wood being too wet etc. but there is always a way to make it work.

All of us here can give you advice and direction but give yourself the  credit for putting it into practice with great results!
