Oooooooh. Beef ribs are basically that last (well that and jerky but I'm not worried about jerky) of my desired items to smoke!!!

I can't wait to see how they turn out.

I managed to knock off ham thanks to my father shooting a ferral hog a buddy of his trapped.
Oh man! I'm going to start a "bucket list" of items that guys dream of smoking and see if I'm missing any :)
 
Took it off the smoker IT of 192. Total smoke time: 10 hours. Wrapped and set. Then sliced....and then....

Overall, the taste was awesome. Super tender, very moist. However, I didn’t realize how much it shrunk. Very little meat for the price.
 
Also, the WSM and bbq guru did great. 220-225 temp for 10 hours. Plenty of fuel left in the tank

Beautiful! I love some beef short ribs from time to time but I find chuck to be more cost effective
