Beautiful hot Sunday in Michigan so why not do some ribs. First attempt couple weeks ago came out great hopefully I can recreate that. 2+hrs in pit running a little hot in the 265-275 range, so I’m thinking they’ll be done in 5rs like the last batch. Gonna do one slab unwrapped and one wrapped for the wife and kids but only for an hour so I don’t over cook it. Second pic was just now 2hrs in. I’ve cracked the smoker door just a touch and that seems to be keeping it now at a steady 250 for the re at of the cook.
last pic all done. IT read like 215 in one so I pulled em and falling apart but still nice tug on the unwrapped when I pulled it.
Last pic is wrapped top slice and unwrapped underneath it. Both fall off the bone the unwrapped which is my preference prob could’ve been pulled 30 min earlier. Juicy but kinda dried outas I chewed but these were thick ribs. Still a success. Kids liked these better than my last ones. But I’ve got some dialing in to do. Not bad for second run.
