Did these today during halftime. I've got cajun hot and pepperoni stix to be smoked, along with a Canadian "Back" bacon, a cured belly & a big old butt! Hope I can get it all in the smoker at one time. LOL

Fresh breakfast maple flavored links. For those rendezvous with flap jacks or waffles during this cool season. I just had to lick my lips thinking about it.

And last but not least, fresh Italian 80/20. Never did this before, thinking when frozen would be nice like a brat size could just cut 'em open for spaghetti sauce or lasagnas. We'll see.

Looks like a pile of goodness there Foam! I'm not sure how you pulled it all off in a halftime.

I wasn't that surprised, but it just looks like a lot. Normally I do a lot more at one time. This was only 10 pounds of beef and about 15 pounds of pork. I still have 15 lbs of butt rubbed & drying in the reefer to smoke, I cut a big chunk off and its in the crock pot for tamales. Its been rendering since last night. I'll freeze it for the next batch of tamales.

I am way behind on my smoker time this year.

Butt now rubbed and dried to hit the smoker.

I cut off a piece of the butt and rendered it down. Will freeze after it cools, the shredded meat and lard will be tamales at a later date.

Pulled the sausage and pepperoni stix ( I think I should have had the butt in the smoker AFTER I pulled the sausage and stix LOL)

Took some meats out the brine, a piece of loin (Canadian Bacon) and some brined sow belly for Jalapeno bacon. Never tried before so I can't really tell you.

Cleaned the kitchen, washed the dishes. Thats since lunch. Oh made a caramel & cranberry apple pie for breakfast....

Seems the Honey crisps are in!!

Slow day so far. Lots of TV.
