Man your killing me Looks Great !!!!
Finished stuffing Penzy's brat mix and the maple sage breakfast sausage. Bologna is getting close! Then I'll drop some of the breakfast sausages in to cook them.
Breakfast Sausages. 15 lbs.
Penzy's Brat mix w/ canned jalapenos. 5 lbs.

Finally ready to vac seal this tub full. From top to bottom, maple sage fresh, maple sage cooked, & Penzy's Brat Fresh. Bologna is finished and in the fridge for the night. Can't wait to do some eating tomorrow!

I've been known to post a lot of pics.
I suggest doing some research but here are two places I recommend you should start.
I forget to show the Chorizo Sausage. Today, I get to truely sample all this hard work. 'Drool View' to come..

Bologna for lunch. It was delicous. I will add a little more salt next time and maybe more fresh garlic. 99% of the time I just make cold or hot sandwiches with bologna so once combined with that, it's a good porky bologny flavor. I might cold smoke the small chub for a few hours just to see how that goes.
