I use a Korean vessel with a lid that has a grommet type silicone edge around it that allows you to push it under the liquid and it stays there, with an air release hole as well.
I wanted to make a bigger batchI use mason jars to make mine. I bought wide mouth lids with grommets and an air lock. I also bought glass weights to keep the cabbage under the liquid. Nothing like fresh, homemade sauerkraut.

Looks great! I’m about to start on a batch as well this week. I will be doing whole head for cabbage rolls. I like to let mine soak for a minimum of 30 days which make the leaves great for cabbage rolls.2329g of sliced cabbage.
