Looking for sides to go with my sauerbraten this weekend. Thinking Red Cabbage. Anyone have a recipe? Not sure what else yet? Guess some kind of potatoes for gravy. Not sure how hard Potato Dumplings are to make. Maybe carrots? Probably just do the beef in the oven.

German potato salad!
 
That was my meal growing up with my Mom being from Germany. Yes to Red Cabbage, Yes to potatoe dumplings just look up a package mix to save time and yes to a gravy from the Sauerbraten. If you want a salad with it.. Cucumber/ Dill salad either creamy or vinagrette as we eat it both ways.

I bought some red cabbage just got to figure out ho to make it. I bought a package of pre made potato dumplings but not sure if I will use it or not. Cucumber/ Dill salad sounds good. I might try my hand at some Brötchen (German Bread Rolls).
 
Google “German red cabbage recipe” 1st one that comes up with 5 stars with 259 ratings is what I use.. has an apple in the recipe from a site that’s called tastes better from scratch Enjoy !

IMO it's really easy to make a sweet sour bomb with too many similar things so I try to mix savory in there. Love german tater salad but would be too much for me with SB. Better with a brat or schnitzel. There is a Reddit thread called "ask a german" and there is TON wicked cool stuff in there but you kinda have to hunt for it. Worth it tho.

Making your own is cool and all but if you can get good stuff no need. Not sure if you have Aldi's but their red cabbage is fantastic, so I would never make it. It's like $3. I use gnocci from store in place of spaetzle. Cheap too. Cut them in half, drop in boiling water, drain then mix with some butter.

This would be how I would run it and bread dumplings could be subbed for spaetzle.

Think I just use potato dumplings I bought.
No reason not to . When I used to get it at a German restaurant it was red cabbage and apple sauce . Dark beer and brochen rolls . Real butter .
 
Yeah easy to make but sorta messy. Forgot to post this in that other thread. My grandma made chicken noodle soup like weekly and hear noodles were spaetzle but a little thicker. She used the same technique but used the board lengthwise so the noodles were long. If you live say 4-8hours from a Hofbrau plan a trip! The food is THAT good. Drinking hall is quite the experience too. Christmas time is about the best time to go. Reservations a must as people are legit traveling long distances to go.

The packaged potato dumpling kit has been my go-to for years. But the price has doubled over the last year due to these tariffs.
 
Dumplings are my favorite. Bread or potato.

8 Kaiser Rolls( Stale. I have used stale rye, pumpernickle, italian..... Breadcrumbs, croutons should work fine.

2 1/4 cups milk
1 TBS butter
3 beef bouillon cubes
2 eggs
1/4 TSP salt
1/4 TSP pepper
1/4 TSP nutmeg
2 TBS chopped parsley
1 TSP baking powder

Crush stale bread into a bowl.

Warm milk, butter and bullion cubes.

Add to bread in bowl.

Let sit for an hour or until easily kneadable.

Add the rest of the ingredients to bowl and knead until a smooth dough is formed.

Shape into balls between pool ball and golf ball in size.

Drop into boiling salt water .

Simmer about 15 - 20 minutes, drain and eat.

This is a basic recipe, excellent as is, but experinent with different spices.
