The weather was pretty stormy yesterday but I managed a quick smoke in between storms.

The recipe was nothing special; just your basic meatloaf recipe. Ground beef, chopped green peppers and onions, chopped garlic, a couple eggs and bread crumbs. I smoked it with mesquite chips and it turned out great. The weather kind of caught me mid smoke and I ended up finishing it in the oven but two hours of TBS gave it plenty of flavor.

Being rushed, I didn't get any before or during smoke pictures but here's how it turned out:
 
I'm glad you didn't get caught in the weather for it proved to be pretty bad storm alright. But your meatloaf looks awesome.

That was my first smoked meatloaf and after having it that way, I doubt I will ever cook one in the oven again.
 
Looks real good. And yes the weather was real bad here in Richmond I guess it was good I had to work this weekend. but once again the meat loaf looked good. It is hard to beat a smoked meat loaf..
