Hello all,
Long time lurker, newbie poster here. I found SMF when my buddy got a MES30 for his birthday and we started drinking beer and smoking meat together....shocker, right? Then I started reading around and perusing another forum I frequent (Floridasportsman.com) and decided to get a smoker. After much reading on here about multiple mods, I decided what I wanted! I have since purchased a Masterbuilt XL 40" propane smoker and modified it with a grilling wok, and a 10" cast iron pan to serve as a chip pan and elevation device.
I seasoned her up 2 weekends ago, and ran 15lbs of chicken leg quarters though it. They came out excellent! I caught a few kingfish (mackerel) and brined, seasoned and smoked them as well for dip. I've also done my first rack of spare ribs and believe I have it down now. Finally, my Maverick 727 arrived and I think I've got this bad boy dialed it.
My first pork butt is going to happen this saturday, and I'll try and do a Q view for all of you who have helped me so much.
