It's summer again, and once again time for one of our favorites, Salt Potatoes.
These are small white or red potatoes that you add salt to the water and boil until tender. Split and eat down with plenty of gobs of melting butter!

You add the salt to the water and boil them until tender. The potato skins will dry with a marked salt deposit on them, flavoring them.
They are regional to the Northeast. However, that doesn't mean you can't enjoy them!
Go to your local store and purchase red or white small potatoes, 1-2", like shown.
Add from ¼ - 1 cup of regular salt to the water (start out with the ¼ first, lol!) and boil until tender, 10-15 min. ave.
Serve and enjoy!
If you're on a salt-restricted diet, just boil and serve as you would any potato and add whatever suits you and your diet.
