Salmon Lox Tomato Sandwiches, QView!!!

Well I put my smoked Salmon Lox to use today.  I saw something similar to what I made and had to give it a shot!

These are open faced Lox Sandwiches:

Ingredients:
  • French Bread (toasted), some special kind that looked great
  • Heirloom and on the Vine Tomatoes
  • Red Onion I soaked/pickled in red wine vinegar for about 20 minutes
  • 2 cream cheeses
    • Left Side - Jalapeno Cream Cheese
    • Right Side - Regular Cream Cheese
  • Black Pepper
  • Some thinly sliced lime for a little juice and visual appeal

Man were they good.  I was very surprised that the regular cream cheese sandwich was better tasting.  The jalapeno cream cheese with pretzels was AWESOME but it took away from the rest of the sandwich.  The regular cream cheese sandwich was better.  I'll keep the Jalapeno cream cheese for the pretzels :)

And now QVIEW!!!!!

Thanks guys!

I'm not much of a sour flavor guy so I can only handle a small bit of capers.  I thought about it but I would never be able to finish an entire jar and I would only want like 3-4 on the entire sandwich lol.

I thought about putting pomegranate seeds on the sandwich as a quirky and interesting kind of take on a caper substitute but I didn't want to get too cute with this being my first lox sandwich.  I think it would go well with the pomegranate so maybe next time :)

Thanks guys.  Had them again last night for dinner.  They sandwiches were a hit around the house! :)

Now I'm debating on doing ABT's where the jalapeno is stuffed with cream cheese plus salmon lox and wrapped with bacon.  I did make both the salmon lox and pork belly bacon 2 weekends ago :)
