Ruben melt eggrolls.

Morning folks,
I found this recipe the other day and just knew I had to try it since I love a good Ruben.

Straight forward ingredients.
Pack of Egg roll wrappers.
1 pound of corn beef sliced into squares.
1 can of sauerkraut. Rinsed and patted dry. It needs to be a dry as possible.
1/2-pound Swiss cheese sliced into squares.

Spoon about 1 tbs of each onto the wrapper.

All wrapped and coated with melted butter.

375 degree oven for roughly 20 minutes. The rest I froze to be cooked later.

I used thousand island dressing for dipping. These are delicious!
 
Bookmarked! I love a Reuben sanny grilled on the stovetop Steve, this is definitely on my list to do real soon, I do up a corned beef about once a month. Thanks for posting ! RAY

Damn these look good Steve! I do something similar using a tube of crescent rolls…but I’ve never used egg roll wrappers for anything. This looks like the perfect recipe to try them out.

Good Gawd Steve,,.thats about as good as it can get. I especially like the idea you can freeze for later that way you can make a whole bunch at a time. Keep 'em coming.
