Taters Roasted in Bacon grease with Fresh Herbs
Fresh Green Beans sautéed with Onions and Garlic
Asian Influenced Cucumber Salad
4c Cucumbers, English, Japanese or Persian
Slice in half lengthwise, cut into thin slices and then lightly crush them.
Place in colander, add salt, mix well and let drain for 20 minutes, rinse and let drip dry in the colander.
2c Tomatoes, whichever variety ya prefer
1c Onion, Red, Sweet or even Green
You can add Cilantro too if ya like
2T Zhenjiang or Rice vinegar
2T Soy sauce
1T Fish sauce
1.5T Sesame oil
1-2T Sesame seeds
2t Sugar
1t salt
Combine and mix till sugar and salt are fully dissolved
Add to veggies
Mix 1T canola oil and 1T minced garlic
Add to veggies
Refrigerate and let marinate at least 3 hours
Serve cold.
