Well as I continue to re-educate myself to smoking after a few years of no smoker I decided on ribs.

I was able to control the temps in the UDS a lot better today and may be close to knowing what I am doi


Dinner plate, no fancy presentation, but oh so good.

There we go, working now. Great smoke ring, ribs look good!! Welcome back to the world of thin blue smoke...

Not sure what celery seed hack is? Smoke ring as just from smoking
Very nice! The celery seed hack is where you add a little to your rub and it exaggerates the smoke ring depth. It will even show a smoke ring if you cook it in an electric oven with no smoke.
