I hope not im losing three really good neighbors at the end of the month. But on the other hand just put the ribs in the smoker



Also I have two 4 lb pork bellies thawing and I'm measuring everything out for pops wet brine
 
As you feed them the ribs tell them there will be plenty more great smoked food on a regular basis - you never know!

Pops brine turns out good bacon - it's a well documented fact
