Hello everybody!
So i am still home on medical leave and to help the healing process im doing some Low impact smoking! I fired up Black Betty and smoking some baby backs and some beef short ribs (later thread). So on to the pics!

The ribs were done 2:10-1:05-:20 at 300 degrees for first hour and 260 the second hour then 240 after that.
I used pecan and apple wood and my candy apple red sauce.

Nice job, I love the color on them when finished!

Did you baste in your red sauce before pulling them?

I brush a light layer on after they come out of the foil and then 20 minutes at ~240.

I have a couple sauces, esp that one i have come up with that put a great color on them (or one that i like)
i usually use turbinado sugar to avoid scorching but i ran out so i used light corn syrup and dark brown sugar mix in the sauce and did ok.

Ribs look great!

Care to share your candle apple red sauce recipe?

Candy Apple Red
(double batch)
2 cup ketchup
1/2 cup ac vinegar
1/4 stick butter
1 cup turbinado sugar (substituted 1/2 cup dark br sugar and 1/2 cup light corn syrup)
1/2 Tbsp salt
2 tsp black pepper
2 tsp garlic
2 tsp dry mustard (optional)
2 Tbsp mild paprika (helps color)

mix ingredients in a small pot.
bring to low boil and simmer for 20 minutes. l
et sit in fridge after cooling for a couple of hours.

can substitute brown sugar for raw sugar but will burn much easier.
can spice it up with cayenne pepper and hot paprika.


great on ribs, PP, or chicken!

thank you. the smoking does help me heal but i move around so much I'm a little sore now from it. worth every bit though!

Ribs look good. Like the color.
