Ribs in the new MES 40

Tried Bears pork loins stuffed with apples, came out great outside of the filling needing more flavor. I won't buy the Great Value stuff anymore.

Built the mailbox mod. Works awesome. Unsure what to use though to cover the exposed heating element. Using a pan to catch dripping right. Ow.

Today is ribs. Next time weather permits it will be pulled pork. Working my way up to brisket.

 
Only issue so far is my Thermopro is reading 193 degrees. It's sitting on middle shelf near the window. Not sure if I should worry about that and crank up the temp on the MES. It's already at 255. When I seasoned it and did the loin, my Thermopro was 15 cooler than the reading on the MES. Very consistent though.

Anyone have thoughts?
