Bbqinng up some nice St. Louis ribs 6.5 lb butt and tenderlion. 6 hours in and I'm at 176 dergree. Ribs done at 4 hours. Cooking at 250

That's a butt load of food, and it all looks delicious.

Took 8.5 hours to get to 197-202 running right at 250 . Didn't get much bark or color. Maybe becuase I only put salt and pepper on it. Used mainly alder with some apple and few pieces of plum. Going to serve everything today. Thanks for the kind words guys!
 
Had it today. I think more spices would have been better. Or a good rub
