With the price of beef these days, I’ve been one the hunt for some reasonable price stuff to cook up….Mrs Civil and me went to GS after GS….only to walk away empty handed……the struck gold at the 5th GS…..

Found these SRF Wagyu Petite Sirloins on sale for 10.99/lb….score!!! Salted them up for a dry brine over night….

Forgot to snap a pic of the after brine…..here is Mrs Civil working on a sauce…..

Some red wine and beef/chicken broth and simmer…..

After 45 mins of simmer she strained it, she added a bit is waster and that left a nice rich sauce…..yum!!!

Added some POG and on the Weber gasser….

Thanks Timbo....I can send you listings of nearby houses if you want....LOL The neighbors have asked a few times if we bbq/smoke every day.....the response is we sure try too! LOL

Thanks texo! We are lucky to have SRF Wagyu herds not too far from us as they were founded 20 mins from us. We were in Jackson Wy not to long ago and these same cuts were 22.50/lb...OUCH.

Much appreciated Chris..... We usually pass on these at the GS cause the meat counter packs are sliced to near deli meat thickness.... I went to the counter to ask the nice lady for some inch thick ones...I was on a mission!
