We’ll I woke up Sunday and it was somewhat warm (28*) up here. So I decided to clear off the driveway real good so hopefully it the rest of the snow on it will melt. The second part didn’t happen. But I also smoked some chicken and ribs. I Used the snake method with briquettes and some chunks of apple wood buried under the briquettes. The ribs, I didn’t tend to at all until the last hour when I put th bbq sauce on them. All I did was rub them with Jeff’s rub and let them ride. I Threw some chicken thighs on as well. For those, once I thawed them out I stuck them in the fridge for a couple hours to let the skin dry out in hopes of crispy skin. Three of the thighs were rubbed with Jeff’s rub and two with a store bought rub. About 20 minutes before it was all done I moved the chicken closer to the charcoal to let the heat crisper up the skin then I pulled it all off. I’m still amazed how easy the kettle is to maintain temp. It was sitting between 250-280* for about 5 hours not having to touch it more than twice to adjust the vent. Back to the snow. I Had the driveway nice and clear and by the end it was covered again. Still counting down the days till spring. Anyway enough talking here are some pics.
