So, today ends in a Y, I may as well smoke some meat....Put the butts on around midnight.. Here they are after 8 hours.. Sitting around 155 each..

A couple of days ago I added the cajun bandit door and a gasket around the lid section.. I was considering a PID , but this thing is so tight now that I dialed it in around 1am and went i woke at 8am, the temps hadn't changed 5 degrees... I am reconsidering my need for a PID :)
 
6 hours with apple and cherry wood chunks...No foiling... They have a great bite off the bone..

Now if the butts would get done ... 14 hours in and probably 2-3 hours to go :D
