Actually, in my family we call enchilada casserole "Rhino".
When we were little kids we were watching Hatari and didn't want to leave the TV to eat dinner, until Mom said that we were having Rhino for dinner, ever since then that is what we call enchilada casserole .
Who here remembers the movie Hatari? It was a great movie!!!
The other night, I smoked up a bunch of chicken breasts that I had in the freeze, and shredded them for Rhino. I bought a few packs of freshly made chipotle corn tortillas from my favorite Mexican store, so that is what I used, which was a first for me, as I've never tried them before. (They are amazing, and my new favorite).
"Rhino" is normally made with shredded beef, but I wanted to try it with chicken.
Instead of listing all the ingredients, I will add photos in a few minutes.
(the only thing not pictured is sliced black olives).
Anyhow, my new invention "Red Rhino/chicken enchilada casserole" It did not disappoint, it was actually kill'er, topped with freshly made guacamole and sour cream. I made a whole hotel pan, so I could freeze half for a quick easy meal down the road, and to eat as leftovers, and meal prep for my wife's lunches.
