Actually, in my family we call enchilada casserole "Rhino".
When we were little kids we were watching Hatari and didn't want to leave the TV to eat dinner, until Mom said that we were having Rhino for dinner, ever since then that is what we call enchilada casserole .
Who here remembers the movie Hatari? It was a great movie!!!

The other night, I smoked up a bunch of chicken breasts that I had in the freeze, and shredded them for Rhino. I bought a few packs of freshly made chipotle corn tortillas from my favorite Mexican store, so that is what I used, which was a first for me, as I've never tried them before. (They are amazing, and my new favorite).

"Rhino" is normally made with shredded beef, but I wanted to try it with chicken.

Instead of listing all the ingredients, I will add photos in a few minutes.
(the only thing not pictured is sliced black olives).

Anyhow, my new invention "Red Rhino/chicken enchilada casserole" It did not disappoint, it was actually kill'er, topped with freshly made guacamole and sour cream. I made a whole hotel pan, so I could freeze half for a quick easy meal down the road, and to eat as leftovers, and meal prep for my wife's lunches.

Thanks for look'in, I'll add the photos in a few minutes.

I hate that shopping center, it's super ghetto, but love the store, I'm in there weekly. I go to the one in Park-N-Shop, I can't handle the one on Monument, I don't feel safe in that parking lot. There are way too many dirtbags hanging out, and I carry when I'm going anywhere on Monument Blvd these days.
I like El Molino on Monument as well, but that area can be a little sketchy at times as well.

I saw it for the first time in 1970-71.
I need to watch it again .
I guess I do, too. Racing across the Savannah in the back of an open pickup truck, trying to lasso a 3-ton rhino with a stick and a rope. Sure. :emoji_laughing: I guess they didn't have set safety coordinators or OSHA in Africa back then. That movie would be a studio legal dept nightmare now.

I SAW IT AT THE SATURDAY MATINEE AT THE FOX THEATER IN REDWOOD CITY WHEN I WAS IN THE FIFTH GRADE, LOVED THE DUKE!

NICE COOK! YOUR PICS TELL ME WE SHARE A FEW COMMON INTERESTS, SONDIKO, LAS PALMAS, GRANDMA CALLED NONI, EVEN THE ENCHILADA PAN. I THINK I GOT MINE ON A COMMERCIAL KITCHEN REMODEL AT THE JEWISH HOME FOR THE AGED AROUND 1970-71 IN SF. DIFFERENT WORLD BACK THEN. RAY
