The pig is delayed until tomorrow. This rain should move out by then. With the temps being in the low 30s and high 20s for the next few nights it might be interesting. That's cold for down here and I figure it should be fine. Probably just use more wood. We plan on running it for at least the next 4 days. More people keep showing up with stuff to smoke. I will take a bunch of pics.

Bad news, my wife and daughter have the Flu.
I left the smoker with a few friends to cook with this week. My only requirement was lots of pics. Hopefully they will make that happen.
I am just as anxious to see them as anyone else.
 
Get the boys to cook up some chicken gumbo, your ladies will be well in no time. Take good care of them and try not to catch it yourself.

Here are the pics I was sent.
I have no idea why they flipped it during the cook. It dressed 117 lbs. That rack was full with it butterflied.
I was wondering where the smoke was coming from I have been smelling !!!!

Smells good!
 
Thanks, but I was not involved much. I got it heated up, intakes adjusted, and put the pig on then I had to go home and play nurse. They said it held temp great. No adjusting, just added wood. Sorry to say, but I won't even be able to enjoy any of it.
 
That's why ya never take the smoke for granted. I bet ya still smelled good after going home though.

Sorry ya missed the fun, hope everything turns out good, and at least you got some smoke on ya so its a good day!
