First off, a huge shout out goes to Tallbm for convincing me to rebuild my MES 40 (purchased in 2012, died in May of last year), and guiding me through the process. I had many questions that could probably be labeled "stupid", but he never seemed to get annoyed, and usually responded promptly. Years ago when I joined this forum, it was because of members who were all too eager to pass along advice and knowledge, and I benefitted greatly. This forum still features awesome people with great advice.

Besides adding a PID, I also replaced the burner. And cleaned the unit up pretty good. If there is anyone considering this procedure, I would tell you it is not difficult. I consider myself fairly handy, and although I have installed switches, outlets, ceiling fans, garage door openers, etc., I really don't like doing electrical work. But this was nothing.

What I have missed with my MES is being able to do lower temps and control the smoke (my other two smokers fall short there). And since I am low on snack sticks, that had to be my first smoke on the "new" MES. This is just a Grandpa's Landjaeger kit from PS Seasonings.

I packaged about 10-and-a-half dozen sticks, and already have requests to inherit some of these. I'll probably be making more sticks shortly. It feels really good to have this smoker functioning again.
 
You have a top shelf smoker now . I used my 30 a couple days ago to do some hotdogs . Haven't used it in awhile , but you can't beat it for stuff like this . Auber set to dry , smoke , and step up to 160 for the ride to finish .

I have the same set up and use it for sausages as well. My newest use is for a warming oven before serving. Love being able to set it for ultra low temps.
