So how did you first ribs turn out? How did you cook them?
 
First time I cooked spare ribs, they came out really dry. This time I didn't let the heat get above 220. Used the 3-2-1 method, and the one's on the bottom 2 racks were fall off the bone. The top rack one's were actually a little under-cooked. Everyone loved them though. I will keep experimenting until I get it right. Worse part about smoking.....cleanup! Drank a lot of that beer in the picture while cooking...can't grill without beer, so why not enjoy a little while smoking also.
 
 
Looks like they turned out good. With a litte fine tuning mine keep getting better and better. You better get to the store and get some more " practice materials" and restock the smoking fluid you went through. I'm just up the 90 in Rochester.
 
Looks like you are getting them dialed in and are already dialed in on the beer 
 
Ribs look like they turned out great, and you also have a well stocked beer fridge!
