Going to smoke my first ham. Have a few questions, Going to use either cherry or Apple wood how long do I use smoke. Been reading post and see 225 about a average temp and what should the IT be before I pull it out. It' a spiral slice ham 10.5lbs I picked up at Krogers for .97 cents a pound. Anything else I need to know. Thank you.
 
Amount of smoke is up to you or personal preference. Cook (heat) to an internal temp of 140f word of caution spiral hams dry out easy I use a disposable foil pan and baste often I use pineapple juice and a mix of bourbon

Just wasn't sure about the smoke time, I don't want a strong taste of smoke. Thanks for the info on basting.
 
No pro here, but I have hickory, oak and apple in my rack. Wife loves when I use apple as she doesn't like heavy smoke taste.

Same here she doesn't like a heavy smoke flavor. I did a Chuck roast and she said it had a very smoky taste. I thought it was fine.
 
Since it's your first go lite on the smoke and use a fruit wood. I'm not sure what type of smoker your using but in my WSM I use maybe two avg. chunks for ham. My wife also doesn't like a heavy smoke flavor. You can adjust from there on your second one.

You only will need to heat the ham to about 140 degrees and I always smoke my hams in a pan flat side down in some chicken broth. If you want to baste, that's a good idea with a spiral sliced ham. I also use some of my rub on it, but be careful cause since it's sliced it will come apart real easy if you try to rub it too much. Next time you may want to get an un-sliced ham.

What AL says. I built my smoker and started this endeavor of meat smoking. Ribs etc, then holidays where upon me and the guy that normally smokes a ham for us at work was out on sick leave so I gave it shot. Followed bears method and now I'm the official smoker at work and do the family holiday hams.
