Mrs. Red is at her sister's today, so I'm bachin' it. I decided to smoke up a batch of hot wings while she's gone, because she doesn't really care for buffalo sauce anyway. I used a variation of Dave's (S2K9K) injection recipe on these wings.
I couldn't find any Frank's hot wing, so I had to improvise. Never tried this before, I'll spice it up a little.
Here are the key players. Since I couldn't find anything but this mild buffalo sauce, I kicked it up a notch with some Louisiana Hot Sauce.
I mixed up the injection: 2 parts buffalo sauce, 1 part creole butter, and 1/2 part Louisiana Hot Sauce for some heat.
Injected all the wings, dusted them with Tony Cachere's Creole Seasoning, then poured the remainder of the injection over them, a little more Tony Cachere's, and into the fridge for a couple hours to marinate.
Into the Rec Tec @ 275*...Added the AMNTS with some Apple/Hickory mix for some extra smoke.
Almost an hour and a half later, they're almost there! I'm cranking the temp up to 325* for about 30 minutes to crisp the skins a little.
They're done!

The wings were delicious! Juicy, tangy, and just the right amount of heat. I mixed up some dipping sauce (ranch dressing and a little horseradish), but the wings were so good all by themselves, I didn't use much of it. Thanks to Dave for a great recipe! If y'all haven't tried it, you really need to.
