When I was a kid, my family would sometimes cook a whole hog for the 4th of July. We used oak wood and we'd cook it all night long. Low and slow. By noon we'd have it pulled, sauced, and with some light-bread (plain ol' white bread), potato salad, and Brunswick stew, it was my favorite meal. And, to this day, it is still my favorite holiday.
