Red's Newest Build: A Direct-Heat Smoker/Grill

I'm in for the ride. I've been looking into these direct grill/smokers alot lately. Are you putting an adjustable grate or firebox on it? Where you can move the fire closer or further from the meat?
 
Looks good so far. Cowboy Kent also has/sells a similar model you might want to take a peek at. I have no idea how good it is but he uses it in a lot of his videos.

EDIT: It looks like it is just a remodeled Hasty Bake with his logo.

Thanks Chris! Yeah I checked out the Kent Rollins Edition too...and you're correct - it's a version of the Hasty Bake Roughneck. They're really nice lookin pits!

I'm in for the ride. I've been looking into these direct grill/smokers alot lately. Are you putting an adjustable grate or firebox on it? Where you can move the fire closer or further from the meat?

Thanks Joe! I looked at several ideas for an adjustable fire/coal basket system, and couldn't come up with anything that was practical, and within my skill level LOL.

I settled on adding extra rails, so the fire grate can be directly under the cooking grate for searing, or 20-24" lower for direct fire smoking.

Guys like you make me jealous! I'd kill to be able to do these kinds of projects.

I'm definitely an amateur! I hadn't done any welding since I was in high school (over 40 years ago). A few years back, I decided I wanted to learn welding...so I just bought a welder and started learning and practicing. I don't kid myself...I'm no pro! But I've gotten competent enough to enjoy doing it and producing some decent outcomes.

That's a nice feature too . I miss having one .

This is my first laser level, so I'm learning how to use it as I go. But so far it's doing just what I needed it to do. When you buy 4x8 steel plates at the steel yard, you can never be sure the milled corners are square. They don't seem to take much care in cutting these at the mill. This laser was an easy way to start with a nice square corner.

This is gonna be fun to tag along. Got utmost confidence in another great build.

Interesting design. Can't wait to see what you come up with. I am wondering is the Stump's smoker pictured the same basic concept of what you are trying for? I purchased a Stump's baby which is an offset design smoker. I was concerned that I would get too much direct heat from one of these types of units.

Looks interesting to say the least. Just curious on how you cut the steel. Grinder with a cutting disc? I would love to get a 5X10 plasma table but space and funds are a bit limited, so it has been a grinder for my projects.

I'll be watching and might just kinda steal what you are doing. Any plans on insulating the whole thing?

I do make plenty of cuts with a grinder and cutting disc...but for plate panels, I usually cut them with my plasma cutter. I don't have the money or the shop space for a CNC plasma table, but that'd sure be nice! I lay out all my cuts, then use a straight edge to guide my plasma torch. As long as I'm careful and keep fresh consumables in the torch, it does a pretty good job of making straight, smooth cuts.

I don't plan to insulate this one, mostly because it'd mean nearly twice the material costs, and I don't expect it'd really be necessary. But I've heard of similar builds where the builder did insulate.

Ever use an Evolution saw ? We used them at work . Had blades that would cut 1/4 and 1/2 " mild steel . 40 tooth carbide tip blades .

I have an Evolution 14" cold cut chop saw. You can see it on the work table in the left background in this pic.

But I assume you're talking about their metal cutting circular saw. I've looked at em a couple times, and I like them...just haven't pulled the trigger on one. I may end up with one of those...one of these days!
