I was having a problem with the outside of the chub getting sticky when I stored in a plastic bag . I got the tip on the paper from the butcher shop I go to . I do the same as you to dry it out , or I have hung in the basement at 60 degrees .Wonder how far I could dry it down? HMMMMMM...

I thought I saw Nepas say something about 17 % weight loss on semi dry sausages .
It does make a difference .
