Picked up some sausage from a local meat store/butcher Friday on my way home from work. Had some bags discounted ( looked to be the leftovers from when they made their different flavored brats( which are awesome btw) ). Decided to do them in flatbread pitas and bagels. Had Reuben and pineapple teriyaki to work with. So I figured swiss an sauerkraut for the Reuben and provolone for the other.. oh and of course a bed of onions lol.

A small meat market in another town that I frequent a few times a year packages all of their sausages in both links and bulk. Probably 75% is linked, and 25% is bulk.

I really like sausage patties for breakfast, or sausage patties as a change from hamburger patties. PLUS... if I want to make some jazzed up meatballs, or lettuce wraps, or use sausage in something like potstickers it's nice to have some bulk on hand.

I really like those racks you have the pita in. Are they rib racks or taco racks? They look like something that I could use!

Taco racks from Blackstone. My boys got me them ( they tend to get me gifts that help feed them lol) for Christmas, but I've only used them s few times. They are great and I suggest any griddling enthusiast to get a set!

The Pineapple teriyaki sounds great also. And in a pita bread . I could sit down to a few of those

I would really like to have the time and equipment to make up my own flavored brats and sausage! Ive "mixed it up a bit" when canning venison but that is really easy lol

You will find the time , and once you start your own . You will love doing them. And make them how you want the flavors.
And there are lots of folks here to help you if needed.
