Rack of Pork - The Copper Pot Way!

Was able to score a rack of pork from our recent exploratory visit to Costco so I decided to give it the copper pot treatment. Here is the photo documentation of said treatment.....

Cleaned up the fat cap & diamond cut in prep for seasoning.

my wife got this pit boss stuff to try and it was just missing something.....but after a little experimenting I discovered it was a match for blending with Big Bald BBQ rub over yellow mustard and topped with maple syrup.......the combination with pork and smoke is intoxicating!!!

Getting to Copper Pot ready, started a batch of coals on the side burner and after getting it heated up to 350, it had a steam clean to prep for the ROP....

On it goes, going to smoke @ 225-250 with maple wood....

Once it hit an IT of 138, I sliced up some pre-baked Yukon golds.....

Then I started a Marsala shallot sauce (Marsala, beef stock, Demi, shallots, S&P, Starch slurry) and started getting the CI hot for spuds.

Oh baby, just hit IT 144, time to pull it!!!

Resting for the carry over and for the sides to finish. As an FYI once IT hit 125, I started putting some smaller splits on the fire to bring the Copper Pot up to 300 ish to “glaze” the crust. I use small splits cause they flash quick with minimal smoke and create a convection roasting heat affect.....

On to the sides, 3 min blanched (salt, onion, garlic water) greens, then pan seared in classic olive and butter.

The Yukon’s went in the hot CI brushed with classic olive and a splash of butter...

Once the sides were done the slicing commenced in order to plate! Nothing but happy thoughts here!

So here is the Easter egg, story.....the SUV Knife....a cross over between a kitchen and camp/skinner.....15n20 w/a stabilized mesquite handle.

That is a fantastic looking plate up. Great job on the smoker build, the chow cooking, and the knife, (Assuming you made it?)

What is the blade length on your knife? Overall length?

It puts the balance point right at the brass pin so it’s a neutral balance point With your index finger...

Looks great . Tasty food , and you know I love the copper pot . Been crazy about knives since I can remember . Never made any , but would like to . Those look great . Very nice work .

Thanks! We still have lots to learn but it is a fun hobby....a bit addicting, but seeing the 17 year old turn off the video game and draw knives is a thing I will invest in!

Thanks Ray! Not sure I've said this before but since I don't get to do much engineering anymore, I have had to find something to fill the mental need to create........

Thanks XR, the weather was a perfect for sure a perfect sunny and 70deg. Made for ideal copper pot cooking conditions. Just sat in a lawn chair with a drink and got some outside time!

LOL no Forged in Fire for me, i'm just a newbie! Love the show though!

Thank Chop! The copper pot is a fun cooker to use for sure. At some point there will be a copper pot "2"....But this knife thing is addicting, so having an impact on free time for other projects!

Man that plate shot is beautiful. I don't know what I have ever seen the "rack of pork" but will have to look the next time I make a trip. Sides are awesome too and right up my alley. Big LIKE all around!

Thanks @SmokinVOLfan I've only seen the rack of port at Costco and it goes fast once they get it in but it is worth the cook for sure in my book! Its a short easy cook as well. I have also brined it before smoking and that is yummy to.

I like that your scored the rack of ribs...very nice! Like!
Thanks @uncle eddie The diamond cut helps get more rub and collects the juices for the shorter cook. Right before I slice it I take all that natural flavor reserve juices and add it to the sauce. Its such a habit that I forget to mention it. But those reserve juices are pure flavor!!!

Thanks @old sarge Costco sells them here for 2.99/lb so it is a great meal for the price! BBQ, blades, and smoking in the sun........a recipe for a good day!
