Quick Chipotle and garlic hot wings

I bar tend as a side gig and had to work this weekend but still wanted to smoke something for a buddy and I Saturday. So the go to quick smoke meal is wings. I injected them with franks hot wings sauce mixed with butter then rubbed some of the left over sauce over them and put a coating of Chipotle and garlic seasoning on them. Placed them in the smoker at 275° for 1hr and half give or take. Pulled them out of the smoker once IT hit 165 then placed them on a hot grill to help crisp up the skin then gave them a quick toss in Franks hot wing sauce mixed with garlic.

I like this plan!  I just made some chipotles and may need to try this out!

Those look great, my last smoked wings attempt ended up with rubbery skin so I've been debating how I'd combat that, one thought was raising temp to 275... do you think that worked out well for it?

Smoking at 275 will give you bite through skin but it won't get crispy. If you can get your smoker up to 300-325 that will help otherwise putting them on a hot grill will crisp the skin in a couple minutes.
 
Thanks for the info uncle, I've been debating flash frying for a couple minutes at the end... maybe I'll give both a try!

Split your batch in two and try both methods in parallel. Report back with your results - and plenty of pictures, of course!
 
I like where your head is at and will definitely do that, a few things on the smoking list prior though!
 
Looks great, nice job and process. I'll have to get me some of those wire food racks before I try this. If you don't mind me asking where did you get them? The look like they'd fit in an MES.

These were disposable grill racks that came in a 3 pack at walmart for under $2. They are flimsy but i just use a cooking sheet to transfer them around when there is food on them. Slide it off the cookie sheet right into the smoker and vise versa.

There is a forum sponsor (I think) that sells silicon grate mates that are dish washer safe and reusable.  MES also has some for sale as well but I believe the forum sponsor has ones that are just as good and less expensive.  Maybe someone will chime in and post a link to the mats from the sponsor :)

Those wings look awesome!  Never did wings because the thighs are cheaper.  But I an going to try your method.
 
 
Is that a keezer? How do you have your beer lines run?
Only 1 line is functional. Its a pretty simple set up as the laundry room/Utility room is on the other side of the tan wall. There is a Kegerator with a conversion kit and blower. Run the lines through an insulated pvc pipe. Total length from Kegerator to tap is less than 5'.

Looks great too.  Agree about crisping the skin at the end of the smoke.
