I don't use a kettle, I use a gas grill, and on low. Low and Slow.
My method is fairly fast, I think.
Usually 2 hours, give or take.
I fire it up and start as soon as it's warmed up. Bones down to start, 7-10 minute turn cycles. (I've been doing 10 minute turn overs lately)
About the 3rd or 4th time I turn my 1/2 racks I start painting (when I see cooked meat). I use my own version of Sweet Baby Rays BBQ Sauce I doctor up with my rub and sage honey. I put on nice even layers and cook them on, hence why I say "painting".
It cooks the layers onto the ribs. The sauce has all the goodies in it, the rub, minced garlic, and texture adding stuff like Montreal Steak seasoning.
I cut the rib racks into individual ribs when they are done, mostly determined by feel. The half racks take on a determining stiffness as they become done.
I cut them on the grill and load them into a roasting pan for service. I usually will paint the exposed meat with any remaining sauce as I arrange the ribs in the pan.
That way everybody can pick the bones they want to gnaw, bigger or smaller, and as many as they'd like.
I do ~1/2 rack per person, and always have some for folks to take home for those who'd like.
Our Family and Friends flock to a Ribfest of Grandpa's Ribs. Grandma makes Corn, Brocolli, and Salad.
Afterwords, I usually man the sink and put the dishes in the dishwasher and wash anything else. Let's the girls clear, pack up, and do the table clearing.
I think we are about due one of my Ribfests. :rolleyes::)o_O I've just got that itch...
