we have a thread about "stall" or "plateau"...

what is the longest your butt or whatever you Q'd has been on the stall

i put a butt in at 5am, at about 12pm the butt hit its plateau, and never moved until 8pm.... i went through alot of charcoal, alot of spritz and alot of coffee..lol
 
I think that butt would have ended up on the gas grill if it were me..........

A couple of hours is probably the tops for me.

I had one of those racing briskets at the Sebring contest last weekend.....hauled arse. No stall/plateau at all. Sitting there with a done brisket around 6 am with a turn in due at 2pm.........it was probably one of the worst briskets I have had in a long time......and the judges agreed. LOL 30th out of 41

I thought I see one on the world book of records 15 years and 1 1/2 tons charcoal later. Still going the last I heared ,,,,Thats a good one
 
What don't you understand?
The meat reaches a plateau where its internal temp will discontinue rising.
After a period of time it will start rising again. During the plateau or "stall" is when the fats are breaking down and making it all taste sooooo good.
 
a gas grill? whats that? i dont own one..lol

i thought it was my thermometers...broke two getting frustrated and nope it was on the stall.lol
