Got some Butcher Block Injections. Used the Pork to inject butt the night before cook. First time using the WSM since that last time had a problem. I put a big piece of hickory on the grate than put charcoal over that. Lit probably about 20 and dumped on top. Waited about 30 minutes and put butt on. Smoker stayed about 260 the whole time and thin blue smoke for over 5 hours without touching a thing. That burying wood works great. Thanks noboundaries noboundaries

Made some Devil Eggs. Love the pioneer women recipe. Sprinkled with some smoked dried jalapeno powder and topped with sweet and spicy jalapenos. Used Seriously Keto tech and sous vide eggs at 192 for 20 minutes than ice bath. Shells about just fell off and cooked perfectly.

Did green beans in IP with some pork butt ham, onions, my serrano peppers and chicken broth.

When pork hit 165 put in foil pan with rack and finished in MES40 until 203. Let rest 2 hours than pulled

Normally would add juice back at this point but this meat so juicy no need to. I have a lot of juice now for something. Hardly any fat.

This the best Pulled Pork by far I have every done! That BBQ Injection worked magic! Great Flavor and all most to tender. I had Carolina Sauce ready but did not need that either. Forgot eggs but they made a good dessert.

Ive not tried the pioneer womans recipe for develed eggs. I'll have to check it out. When I do mine I'll make a relish with the sweet jalapenos in a little food chopper/processor . then I'll use that in the egg filling instead of a pickle relish like a lot of recipes call for.

Back in love with the WSM again. Almost threw that wood out. Was close to 6 hours and never had such a thin blue smoke like that before. Thanks
