Searching through post Ive found there seems to be about 3 common ways to place the probe in the smoker for temp reading. In a block of wood, in a potato, and a small metal rack clip. My question is one better than the other? Does the wood block and potato need to warm up first? Would the metal clip or just setting on the rack make it read hotter than it really is?

It's just a matter of preference. I mostly use the clip that came with my Maverick but I have used a potato as well. The metal clip can't heat your probe up hotter than the smoker is...
 
On my Mini I just drilled a couple of hole and inserted a rubber grommet into them, the grommet holds the probe so no need for any other holder. I put 2 so I could measure temps at both racks. The third hole you see in the pic is to run the meat probe into the smoker.

 
Mc Master - Car has the silicone (heat resistant) grommets.  I would also think that Grainger would carry them as well.
