225 Temp, hickory chips

1310 Time in

1630 Time out

139 Internal temp

148 Temp after tented for 20 mins

My Daughter in law has requested a Prime Rib for Christmas dinner.......Hope mine turns out that good!

One thing that we do is cook it to rare...then before eating place it in a pot with warmed broth to bring it to medium rare. Usually just 2 of us so not a big deal, but then do the same thing reheating leftovers...don't have to worry about over cooking when reheating.
