Hi,

So funny thing happened a few weeks ago. i got fired from my Job. this is OK because i hated working there.  Of course i had to find a new job etc. so i found out yesterday a company i interviewed with is going to make me an offer Monday. So i decided to celebrate this and since its holidays and everyone has prime rib on sale i picked up about 4 prime rib roasts. I am cooking a 5.4# rib roast and froze the other three. I have some pics of course so i will get to them. i will update this thread throughout the cook. any comments are welcome. thanks!

i marinaded the roast in olive oil salt pepper and rosemary



after it sat all night in the marinade


Move it to my roasting and rib rack

this actually helps heat and smoke get to the bottom of the roast good.

OK so almost 2 and half hours of smoke on Black Betty and the PR is time to come off. it is 129 IT


I put in afoil pan and double wrapped in foil for some resting


Will have some more pics when sliced and on the plate!

Looks delicious.   I love this time of year.  The meat is really cheap.  5.77 for rib roast and 3.99 for NY strip loin roasts.  Time to stock the freezer.

One of my stores has PR for $5.77 right now, but since I have 4 in my Freezer I passed them up, because they are Select.

I figure next week they'll have sales on some "Choice" Rib Roasts. Hope to get about 4 more.

Prime rib on sale around here just means you only have to give them your first born, not your first two.

i paid $7.97# for boneless choice angus.

but at least we eating good!
